Emma bülow
Emma Bülow is the daughter of glassblower Pernille Bülow and the sister of the liquorice king Johan Bülow. She comes from a family of entrepreneurs, and since she was very young, she has always known that she wanted to create something that was entirely her own. When she was old enough to work, her mother introduced her to the creative environment at Glastorvet in Svaneke, and there, a little girl with a lot of ideas, dreams, and a go-getter attitude blossomed. For Emma, who grew up in a family that thinks big and creates, it was natural to embark on a project.
The whole idea behind The Mallows originated from Emma’s love for the classic, chewy “flipper.” The small dolphin-shaped candy sold in supermarkets that can be stretched several centimeters before taking a bite. The inspiration from the sweet dolphin sparked the young woman’s thoughts, and at the age of 23, she destroyed several kitchen machines in her attempt to create the first perfect chewy mallows. Subsequently, she started The Mallows.
THE MALLOWS:
At The Mallows, we have several lines within our marshmallows. Our Classic Mallows consist of 6 different variants, and several times a year, we reinterpret special limited editions, where we revisit classics and experiment with new flavors. If you ask us, marshmallows and caramel go hand in hand – and this was the starting point for our Caramel Filled Mallows, where the variants are coated with Belgian chocolate of the highest quality.
Later, we expanded the universe further with our Strawberry Filled Mallows, where soft marshmallow meets a rich strawberry filling. For those who love love, we have our Raspberry Hearts with white chocolate and raspberry. Additionally, we have our Crispy Mallows, which are our crunchy mallows with a crisp surface that brings extra texture and flavor to the experience.

Since our start in 2016, we have prioritized producing mallows in a responsible way with consideration for the environment and people. We carefully select the best natural ingredients and never compromise on quality. This means that we are constantly working on developing new exciting flavors and always trying to make our product even better. Our mallows are “honest and unexpected,” and what particularly makes us stand out from the traditional marshmallow is the texture.
Our mallows are more “chewy” and have plenty of bite. We like that you have to “chew” your way through the marshmallow and that you can taste the different layers as you chew. Some of our mallows are coated with exclusive Belgian chocolate, while others are dusted with either sweet berries or tart lemon. So whether you prefer slightly salty, sour, sweet, or bitter, you are guaranteed to find a variant that matches your taste buds.

At The Mallows, we work with dragée – a traditional method where the marshmallow is slowly coated with chocolate in rotating copper pans at our factory in Glostrup, Denmark. Layer by layer, the chocolate embraces the marshmallow while carefully selected ingredients are added to gradually build flavor, richness, and depth.
This process transforms the marshmallow into an exclusive specialty, where chocolate surrounds the soft center and creates a harmonious balance. It is precisely this way of building flavor, layer by layer, that makes our mallows such a unique experience.
